Zucchini Carrot Muffins

Ingredients

    • 1 ½ cups grated zucchini
    • 1 cup grated carrot
    • 1 egg
    • 2 TBL Bella Oliva Organic Butter EVOO
    • 1 cup all purpose flour or whole wheat pastry flour
    • ¼ cup granulated sugar
    • ¼ cup light brown sugar
    • ½ tsp. almond extract
    • 1 tsp. salt
    • 1 tsp. baking powder
    • 1 tsp. cinnamon
    • 1/3 cup slivered almonds, toasted
    • ¼ cup dried cherries

Directions

  1. Preheat oven to 350 degrees. Line a 12 cup muffin tin with liner or grease with cooking spray.
  2. In a small bowl combine the flour, sugars, baking powder, salt and cinnamon.
  3. In a large bowl combine grated zucchini, carrots, egg, almond extract and EVOO.
  4. Add the dry ingredients to the wet and mix until combined. Fold in the almonds and dried cherries. Pour into prepared muffin tin and bake for 15-18 minutes.
