White Balsamics

The white balsamic vinegars featured at Bella Oliva Taproom are produced by combining white grape must (which is freshly pressed Trebbiano grapes) with white wine vinegar into a mixture that is cooked at a low temperature in order to avoid darkening. Next the vinegar is aged in oak casks using new wood to produce a product that has more of a lighter, tart flavor with a clean aftertaste. Typically, white balsamic vinegar is used with lighter colored foods, dressings and sauces because it does not lead to any discoloring.
