Watermelon, Feta and Arugula Salad


  • 3 lbs watermelon, cut into 1 in. cubes
  • 1 small red onion, thinly sliced
  • 1 ½ cups arugula
  • 1/3 cup fresh orange juice
  • 1 tablespoon Bella Oliva Persian Lime EVOO
  • 2 tablespoons Bella Oliva Raspberry Balsamic Vinegar
  • ½ cup Feta cheese
  • 1 cup coarsely chopped walnuts
  • 2 tablespoons Bella Oliva Single Varietal EVOO (Mild)


In a large bowl, toss watermelon with red onion. Cover and refrigerate until chilled, 30 minutes. Add arugula to the watermelon. In a small bowl, combine the orange juice, lime olive oil and raspberry balsamic vinegar. Pour dressing over the salad and season with salt and pepper.Top with Feta cheese and walnuts (can also substitute almonds). Drizzle with extra virgin olive oil and serve.
