Roasted Cinnamon Pear Parfait


  • 6 pears (cut into 1/2 inch cubes)
  • 2 tbsp. Almond Oil
  • 2 tbsp. Bella Oliva Maple Balsamic
  • Sea Salt (finely ground)
  • 1 cup Bella Oliva Cinnamon Pear Balsamic
  • 2 tbsp sugar (divided)
  • 8 oz. mascarpone cheese (room temperature)
  • ½ cup plus 2 tbsp. heavy whipping cream (divided)
  • 1 packet of Dream Whip
  • 1 tsp vanilla
  • ½ tsp. cinnamon
  • Crumbled Almond Cookies
  • Sliced Almonds (optional)


  • Pears and Cookies: Preheat oven to 425 degrees. Place pears in a bowl, drizzle with almond oil and maple balsamic, sprinkle with a pinch of sea salt and mix well. Spread on baking sheet and roast in preheated oven for approximately 30 minutes or until pears are starting to brown. Place almond cookies into a plastic bag and crush, set aside.
  • Cinnamon Pear Sauce: While pears are roasting, make a Cinnamon Pear reduction sauce. Pour the Cinnamon Pear Balsamic in a heavy saucepan and add 1 tablespoon of sugar. Bring to a boil over medium heat, then reduce heat and simmer for about 30 minutes or until it has reduced by a third, is thickened and coats a spoon. Remove from heat and cool. If syrup becomes too thick, microwave for 10 or 15 seconds to warm and thin before drizzling on parfaits.
  • Cream: Mix mascarpone cheese with 1 tablespoon sugar and 2 tablespoons whipping cream (not whipped), set aside. Set deep, narrow mixing bowl, beaters or whisk attachment and heavy whipping cream in freezer for 10 minutes. Combine 1/2 cup of whipping cream, a packet of Dream Whip, the vanilla and the cinnamon in mixing bowl. Beat on low speed until ingredients are blended, then whip on high speed for four minutes until soft peaks form. Fold whipped cream into mascarpone cheese mixture.
  • Assemble parfaits by layering crumbled cookies, roasted pears, cinnamon pear sauce, and whipped cream mixture, in that order. Repeat layers ending with whipped cream layer. Garnish with sliced almonds, if desired. Makes 4 parfaits.
  • You do not have to make the roasted pears into a parfait. If you want to skip the added sugar and cream, simply drizzle the Cinnamon Pear Sauce over the pears when they come out of the oven.
