Grilled Bruschetta with Grilled Red and Yellow Peppers, Gorgonzola and Basil Oil

Ingredients

  • ¾ cup Bella Oliva Basil EVOO
  • Salt and pepper, to taste
  • ½ tsp sugar
  • 12 slices (1/2 inch thick) French baguette
  • 12 oz gorgonzola, crumbled (room temperature)
  • 2 red bell peppers, grilled peeled and seeded, sliced thinly
  • 2 yellow bell peppers, grilled peeled and seeded, sliced thinly

Directions

  1. Heat the grill to high
  2. Combine the oil, salt and pepper in a bowl.
  3. Grill the bread on both sides (or toast under broiler) until golden brown.
  4. Remove from grill and spread some of the blue cheese on 1 side of each slice, top with some of the peppers and drizzle with a little of the basil oil mixture.
