Chocolate Chip Cookies

  • 2 cups flour
  • ¾ tsp baking soda
  • 1 tsp cornstarch
  • ¾ tsp salt
  • ½ cup plus 1 TBL Bella Oliva Butter EVOO
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • 1 tsp cinnamon
  • 1 TBL vanilla
  • 1 egg plus 1 egg yolk
  • 1 ½ cups chocolate chips
  • 1 cup walnuts, chopped (optional, but delicious)

Preheat oven to 350 degrees. Line baking sheets with parchment paper.

Combine flour, baking soda, cornstarch, cinnamon and salt in a medium bowl.

In the bowl of a stand mixer, combine the EVOO and sugars. Mix on low speed until thoroughly combined. Add the egg and then the yolk one at a time. Add the vanilla and mix on medium speed until the eggs and vanilla are fully incorporated.

On low speed, slowly add the dry ingredients mixing just until combined. Add the chocolate chips and walnuts and mix until distributed throughout.

Drop 1” balls of dough onto prepared cookie sheet. Bake for 8-10 minutes and golden brown.
