Blood Orange Olive Oil Cranberry Muffins


  • 1 1/2 cups flour
  • 1 cup cranberries, fresh, frozen or dried
  • 1 cup plain fat-free yogurt
  • 1/2 cup sugar
  • 3/4 cup of Bella Oliva Blood Orange EVOO
  • 1 pinch of salt
  • 1 tablespoon baking powder
  • 1 medium egg
  • ½ cup chopped walnuts (optional)


Preheat oven to 375°.

Mix flour, baking powder and salt in a bowl. Combine the remaining ingredients, except for the cranberries and nuts. Add the flour mixture to the wet and mix until the batter is combined. Gently stir in cranberries and nuts.

Pour batter into greased muffin tins so the cups are half-filled. Bake for 25 minutes.
