BBQ Chicken Breasts with Chipotle-Pineapple Marinade and Pineapple Salsa









  • 1/2 cup Bella Oliva Chipotle EVOO
  • 1/2 cup Bella Oliva Golden Pineapple White Balsamic
  • 4 Boneless, skinless chicken breasts
  • Salt
  • Pepper
  • Bella Oliva Adobo Lime or Honey Chipotle Rub (or garlic powder
    and cumin), to taste


  1. Combine the oil and vinegar, set 1/4 cup aside. Put chicken breasts in a zip-lock type bag. Pour the marinade over the chicken and seal the bag, removing as much air as possible. Refrigerate 1-3 hours.
  2. Take chicken out of refrigerator approximately a half hour before barbequing.
  3. Take the chicken out of the bag and shake off the excess marinade. Season with choice of rub or season with garlic powder and cumin.
  4. Grill chicken, basting occasionally with the reserved marinade. Serve with Pineapple Salsa.

  • 1 cup fresh pineapple, small dice
  • 1 red bell pepper, small dice
  • 1/3 cup purple onion, small dice
  • 1 small jalapeno pepper, minced
  • 1 Tbsp. Bella Oliva Golden Pineapple White Balsamic
  • juice from ½ a lime
  • Salt& pepper, to taste


  1. Combine all ingredients in a bowl and stir to combine. Refrigerate until ready to use. Serve with the Chipotle-Pineapple BBQ Chicken or with tortilla chips.
