Balsamic Sweet Potato Mash


  • 3 lbs. sweet potatoes
  • 2 tbsp. fresh thyme chopped
  • 1 1/2 tbsp. Bella Oliva EVOO (any single varietal)
  • 1/2 tsp. cinnamon
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp Bella Oliva Traditional 18 Year Balsamic Vinegar
  • salt and pepper to taste


  1. Preheat oven to 425°.
  2. Pierce potatoes in several places with fork.
  3. Place potatoes on baking sheet and bake for one hour or until fork tender.
  4. When potatoes are cool enough to handle, slice each potato in half and scoop the flesh into a large bowl.
  5. Add the balsamic vinegar, thyme, oil, and cinnamon.
  6. Mash until smooth.
  7. Taste season with salt and pepper.
  8. Top with parsley.
